Not sure why businesses wouldn't just invest in tech then. Being in a disruptive landscape is only a problem if you refuse to change.

First of all, the are investing in tech. However that's such a small part of spending. But more importantly, if you're a restaurant, you just don't have the scale to invest in the kind of technology that McDonald's is investing in. Further, it's not about tech investing for many companies, the scale of disruption makes their business model obsolete.

Hard to invest in tech in a way that makes sense and generates positive ROI. Yet still, some crowdfunded startup with crazy ideas may come with something so innovative and disruptive that it would damage or even wreck your business. They have nothing to lose in contrast to established businesses.
Also there is something making once-successful businesses unable to adapt flexibly, so they tend to repeat their winning pattern constantly until it stops working and they go bust.
